OVER GLOBAL
The original design of Global knives by hand designer Komin Yamada was registered in 1985 by Yoshikin. The revolutionary design of the handle quickly made furore. Various inspectorates felt it was important for the hygiene to take a knife from (apparently) a piece of steel in the hospitality industry.
The blade is forged and is fabricated from the patented CROMOVA steel. This type of steel with a hardness of 56-58 Rockwell guarantees a minimum of breakage and is as good as stainless. The handle is nonslip his dimple profile. The knives are sharpened at an angle of 15-17 ° so that a longer sharpness than a traditional European knife is ensured.
The current series of Global knives and related items, as currently in the stores is very large. Besides the knives are also whetstones, sharpening rods (ceramic and diamond), spatulas, shovel work blocks and cases available. The range is from 1985 expanded from 16 to more than 100 knives.
